Preparing the Fish

Make the Batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water until a smooth batter forms. Let it rest for 15 minutes.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it's fully coated.

Fry the Fish
Carefully place the battered fish into the hot oil, frying in batches for about 4-6 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick chips (fries).

Heat the Oil
In a separate deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

Fry the Chips
Fry the potato chips in batches for about 5-8 minutes until golden and crispy. Remove and drain on paper towels. Season with salt.
