Method
Preparation
- 1
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Whisk them together until evenly mixed.
- 2
Heat Wet Ingredients
In a small saucepan, heat the milk and water over medium heat until warm (about 110°F or 43°C). Remove from heat and stir in the butter until melted.
Dough Formation
- 3
Combine Wet and Dry
Pour the warm milk mixture into the bowl with the dry ingredients. Stir with a wooden spoon until the dough begins to come together.
- 4
Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
Rising
- 5
First Rise
Place the kneaded dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
- 6
Shape Muffins
After the first rise, punch down the dough and turn it out onto a floured surface. Divide the dough into 8 equal pieces and shape each into a round muffin. Sprinkle cornmeal on a baking sheet and place the muffins on it.
- 7
Second Rise
Cover the shaped muffins with a cloth and let them rise for another 30 minutes.
Cooking
- 8
Cook Muffins
Preheat a griddle or frying pan over medium-low heat. Cook each muffin for about 7-10 minutes on each side, or until golden brown and cooked through.
Serving
- 9
Cool and Serve
Remove the cooked muffins from the heat and let them cool on a wire rack. Serve warm, split open, and toasted if desired.
