Fries Preparation

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to form fries.

    Soak the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch and makes the fries crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the correct temperature.

    Fry the Potatoes

    Remove the fries from the water and pat them dry with a clean kitchen towel. Fry the potatoes in batches for about 5-7 minutes or until golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil.

    While the fries are still hot, sprinkle them with salt to taste.

Curry Sauce Preparation

    In a saucepan over medium heat, combine the coconut milk, curry powder, minced garlic, grated ginger, soy sauce, and sugar.

    Cook the Sauce

    Stir the ingredients together and bring the mixture to a gentle simmer. Allow it to cook for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly.

    Add Lime Juice

    Remove the saucepan from heat and stir in the lime juice. Adjust seasoning if necessary.
