Calamari Preparation

Clean and Prepare Calamari
Rinse the fresh calamari under cold water. Remove the skin and innards if not already cleaned. Cut the calamari into rings about 1/2 inch thick.

Prepare the Breading
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper together. In another bowl, whisk together the egg and milk until well combined.

Dredge the Calamari
Dip the calamari rings first into the egg mixture, allowing excess to drip off, then coat them in the flour mixture. Shake off any excess flour.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and transfer to a paper towel-lined plate. Sprinkle with salt immediately.

Add Tomatoes and Spices
Pour in the crushed tomatoes, red pepper flakes, dried oregano, salt, black pepper, and sugar. Stir to combine.

Simmer the Sauce
Bring the sauce to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally. Add the chopped fresh basil in the last few minutes of cooking.
