Mix the Ingredients
In a large bowl, combine the cooked corned beef, boiled potatoes, chopped onion, minced garlic, parsley, salt, and black pepper. Mix well.

Form the Cakes
Add the eggs and breadcrumbs to the mixture and stir until combined. Shape the mixture into patties.

Cook the Cakes
In a large skillet, heat olive oil over medium heat. Fry the patties until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Prepare the Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice until thickened.

Slowly drizzle in the melted butter while continuously whisking until the sauce is smooth and creamy. Season with salt and cayenne pepper.
Poached Eggs

In a saucepan, bring water to a gentle simmer and add white vinegar.

Crack each egg into a small bowl and gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.
