    Prepare the Potatoes

    In a pot of salted water, boil the diced potatoes until tender, about 15 minutes. Drain and let cool slightly.

    In a large bowl, combine the cooked corned beef, boiled potatoes, chopped onion, minced garlic, parsley, salt, and black pepper. Mix well.

    Form the Cakes

    Add the eggs and breadcrumbs to the mixture and stir until combined. Shape the mixture into patties.

    Cook the Cakes

    In a large skillet, heat olive oil over medium heat. Fry the patties until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Hollandaise Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice until thickened.
