    Cook the Rice

    In a medium pot, add 1 cup of white rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is fluffy and the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    Prepare the Chicken

    While the rice is cooking, cut the chicken breasts into bite-sized pieces and season with salt and black pepper.

    Chop the Vegetables

    Dice the onion and chop the bell peppers into strips.

    Sauté the Vegetables

    In a large skillet or wok, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Then add the chopped bell peppers and cook for an additional 2-3 minutes.

    Cook the Chicken

    Add the seasoned chicken pieces to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink.

    Add the Curry Sauce

    Sprinkle 2 tablespoons of Irish curry powder over the chicken and vegetables. Pour in 400 ml of coconut milk, stir well to combine, and let it simmer on low heat for about 10 minutes, allowing the flavors to meld together.
