Marinate the Chicken
In a bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading
In a shallow dish, mix together the flour, cornstarch, Cajun seasoning, salt, and black pepper. Mix well until combined.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each piece in the flour mixture, pressing lightly to adhere. Shake off any excess flour and set aside on a plate.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully place the coated chicken breasts into the hot oil. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Drain the Chicken
Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

Assemble the Sandwich
Slice the brioche buns in half. On the bottom half, spread 2 tablespoons of remoulade sauce. Place a lettuce leaf, followed by the fried chicken, tomato slices, onion rings, and pickles. Top with the other half of the bun.
