    Cook the Sausages

    In a skillet over medium heat, add olive oil. Once hot, add the Irish pork sausages and cook for about 10-12 minutes, turning occasionally until browned and cooked through. Add the fresh sage leaves in the last 2 minutes of cooking to infuse the flavor.

Champ Toasted Mash

    Prepare the Potatoes

    Peel and chop the potatoes into even chunks. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until creamy.

    Add Scallions

    Finely chop the scallions. Fold them into the mashed potatoes until evenly distributed.

House Baked Beans

    Combine Beans and Sauce

    In a medium saucepan over medium heat, combine the canned white beans and tomato sauce. Stir in brown sugar, mustard, smoked paprika, garlic powder, salt, and black pepper.

    Simmer

    Bring the mixture to a simmer and let it cook for about 10-15 minutes, stirring occasionally until heated through and slightly thickened.
