    Prepare the Wild Mushroom Gratin

    Preheat your oven to 375°F (190°C). In a skillet over medium heat, add olive oil and sauté the garlic until fragrant. Add the wild mushrooms, thyme, salt, and pepper. Cook until the mushrooms are tender, about 5-7 minutes.

    Stir in the heavy cream and grated Parmesan cheese, and mix until well combined. Transfer the mixture to a baking dish and bake for 20-25 minutes until bubbly and golden on top.

    Cook the Sunchokes

    While the gratin is baking, prepare the sunchokes. Peel and slice them thinly. In a separate skillet, heat olive oil over medium heat and sauté the sunchokes until golden and tender, about 10-12 minutes. Season with salt and pepper.

    Cook the Wagyu Sirloin

    Heat a grill or skillet over high heat. Season the Wagyu sirloin with salt and pepper. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness. In the last minute of cooking, add the black truffle butter on top of the steak to melt.

    Serve

    Slice the Wagyu sirloin and serve with a generous scoop of wild mushroom gratin and sautéed sunchokes on the side. Drizzle any remaining truffle butter over the steak.
