Directions

  1. 1

    Prepare the Cake

Preheat your oven to 350°F (175°C). Grease a round cake pan with olive oil and line the bottom with parchment paper.

  2. 2

    Mix the Wet Ingredients

In a large mixing bowl, whisk together the olive oil, granulated sugar, eggs, orange zest, and orange juice until well combined.

  3. 3

    Combine the Dry Ingredients

In another bowl, sift together the all-purpose flour, baking powder, and salt.

  4. 4

    Combine Wet and Dry Mixtures

Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Avoid overmixing.

  5. 5

    Add Marmalade

Fold in the orange marmalade until evenly distributed.

  6. 6

    Bake the Cake

Pour the batter into the prepared cake pan and bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  7. 7

    Make the Meringue

While the cake is baking, beat the egg whites in a clean bowl until soft peaks form. Gradually add powdered sugar, continuing to beat until stiff peaks form.

  8. 8

    Top the Cake with Meringue

Remove the cake from the oven and let it cool slightly. Spread the meringue over the top and return to the oven for an additional 10 minutes, or until the meringue is golden and crispy.

  9. 9

    Prepare the Whipped Yogurt

In a bowl, whisk the Greek yogurt until smooth. You can add a little honey for sweetness if desired.

  10. 10

    Serve

Slice the cake and serve warm with a dollop of whipped Greek yogurt on the side.
