    Marinate the Pork

    In a large bowl, combine the pork shoulder with salt, black pepper, and any desired spices. Let marinate for at least 1 hour or overnight in the refrigerator for best flavor.

    Cook the Pork

    Heat a grill or skillet over medium-high heat. Add the marinated pork shoulder and cook until browned on all sides and cooked through, about 15-20 minutes. Let rest for 10 minutes before slicing.

    Char the Pineapple

    On the same grill or skillet, add diced pineapple and cook until caramelized and slightly charred, about 5-7 minutes. Remove from heat.

    Prepare the Tomatillo Salsa

    In a bowl, mix the chopped tomatillos, onion, and cilantro together. Add salt and lime juice to taste.

    Assemble the Tacos

    Warm the corn tortillas on the grill. Slice the pork and layer it on each tortilla. Top with charred pineapple and tomatillo salsa. Garnish with additional cilantro and lime wedges.
