Preparation and Cooking

    Marinate the Chicken

    In a large bowl, combine the piri piri seasoning, salt, black pepper, cumin, and buttermilk. Add the chicken pieces and ensure they are well coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Prepare the Coating

    In a shallow dish, place the all-purpose flour. You can season it with a little more salt and pepper if desired.

    Coat the Chicken

    Remove the chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour, ensuring a good coating. Shake off any excess flour.

    Fry the Chicken

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat to 350°F (175°C). Fry the chicken pieces in batches until golden brown and cooked through, about 12-15 minutes per batch. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).

    Drain and Serve

    Remove the fried chicken and place it on a wire rack or paper towels to drain excess oil. Serve hot, garnished with fresh cilantro.
