Prepare the Huitlacoche Filling
In a skillet over medium heat, add a tablespoon of olive oil. Add the huitlacoche and sauté for about 5-7 minutes until heated through. Stir in half of the grated Parmesan cheese and season with black pepper to taste. Remove from heat.

Assemble the Stuffed Potatoes
Once the potatoes are baked, remove them from the oven and let cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, creating a small cavity. Mix the scooped potato with the huitlacoche mixture and fill back into the potato skins.

Finish and Serve
Top each stuffed potato with the remaining Parmesan cheese and a drizzle of olive oil. Return the potatoes to the oven for an additional 10-15 minutes until the tops are golden and crispy. Serve topped with pickled shallots and wild greens.
