Prepare the Tortillas
In a skillet, heat 1 tablespoon of cooking oil over medium heat. Fry each corn tortilla until golden and crispy, about 1-2 minutes each side. Remove and set aside.

Cook the Eggs
In the same skillet, add another tablespoon of cooking oil. Crack the eggs into the skillet and cook sunny-side up until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt to taste.

Assemble the Huevos Rancheros
On each crispy tortilla, place a fried egg, followed by a generous spoonful of salsa verde. Crumble queso fresco on top, and add pickled Fresno peppers, a sprinkle of fresh cilantro, and a scoop of pico de gallo.

Serve immediately while warm, and enjoy your Huevos Rancheros!
