Churros Preparation

    Prepare the Dough

    In a medium saucepan, combine water, butter, granulated sugar, and salt. Bring to a boil over medium heat. Once boiling, remove from heat and stir in flour until the mixture forms a ball. Allow to cool slightly.

    Incorporate Eggs

    Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in cinnamon.

    Heat Oil

    In a large pot, heat vegetable oil over medium-high heat to 375°F (190°C).

    Fry Churros

    Spoon the dough into a piping bag fitted with a star tip. Pipe 4-6 inch strips of dough into the hot oil, cutting with scissors. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Coat in Sugar

    While still warm, roll churros in a mixture of granulated sugar and cinnamon.
