    Prepare the Blue Butter

    In a bowl, mix the Valdeón blue cheese and unsalted butter until well combined. Set aside.

    Sear the Hanger Steak

    Season the hanger steak with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest for 5 minutes.

    Cook the Cherry Tomatoes

    In the same skillet, add halved cherry tomatoes and cook for 2-3 minutes until they start to blister. Season with salt and pepper.

    Prepare the Crispy Shallots

    Thinly slice the shallots and fry them in hot oil until golden brown and crispy. Remove and drain on paper towels.

    Serve

    Slice the rested hanger steak and serve it topped with a dollop of blue butter, blistered cherry tomatoes, and crispy shallots. Garnish with chopped fresh parsley.
