Preparing the Fries

Cutting the Potatoes

Wash and peel the russet potatoes, then cut them into fries or wedges.

Soaking the Fries

Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Frying the Fries

Drain and pat the potatoes dry. Heat olive oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Drain on paper towels.

Seasoning the Fries

While hot, sprinkle the fries with lemon pepper and za’atar seasoning. Toss to coat evenly.

Making the Feta Dill Aioli

Combining Ingredients

In a bowl, combine feta cheese, mayonnaise, chopped dill, minced garlic, and lemon juice. Mix well until smooth.

Adjusting Consistency

If the aioli is too thick, add a little water or extra lemon juice to reach desired consistency.
