Duck Breast with Madeira Stuffing, Cavolo Nero, and Pomegranate Salsa

Prepare the Madeira Stuffing
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent. Stir in the breadcrumbs and add the Madeira wine, mixing until the breadcrumbs are moist. Season with salt and pepper, and set aside.

Prepare the Duck Breasts
Score the skin of the duck breasts in a crisscross pattern. Season both sides with salt and black pepper. In a skillet, place the duck breasts skin-side down over medium heat and cook for about 6-8 minutes until the skin is crispy. Flip the breasts and cook for another 4-5 minutes, or until they reach the desired doneness. Remove from heat and let rest.

Cook the Cavolo Nero
In the same skillet, add another tablespoon of olive oil if needed and toss in the chopped cavolo nero. Sauté for about 5-7 minutes until tender and slightly wilted. Season with salt and pepper.

Assemble the Dish
Slice the duck breasts and plate them alongside the Madeira stuffing and sautéed cavolo nero. Top with the pomegranate salsa before serving.
