Cook the Jamón Butter
In a small saucepan, melt the butter over medium heat. Add chopped jamón and minced garlic, cooking until the jamón is crispy and the garlic is fragrant, about 3-4 minutes. Remove from heat and set aside.

Sauté the Mustard Greens
In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the mustard greens and sauté until wilted, about 3-4 minutes. Season with salt and lemon juice, then set aside.

Cook the Diver Scallops
In the same skillet, add another tablespoon of olive oil and heat over high heat. Season the diver scallops with salt and black pepper. Sear the scallops for 2-3 minutes on each side, until golden brown and cooked through.

Plate the Dish
On a serving plate, layer the baked potatoes, followed by the sautéed mustard greens. Place the seared diver scallops on top, and drizzle with the jamón butter. Serve immediately.
