Roast the Cauliflower
Preheat your oven to 425°F (220°C). In a large bowl, toss the chopped cauliflower with olive oil, chipotle powder, cumin, garlic powder, and salt until well coated. Spread the cauliflower on a baking sheet in a single layer.

Bake
Roast the cauliflower in the preheated oven for 25-30 minutes, or until golden brown and tender, stirring halfway through the cooking time.

Warm the Tortillas
While the cauliflower is roasting, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.

Assemble the Tacos
Once the cauliflower is done, remove it from the oven. To assemble, place a generous amount of roasted cauliflower on each tortilla, then top with chopped cashews, crumbled queso fresco, and fresh cilantro.

Serve the tacos with lime wedges on the side for squeezing over the top.
