Make the Dough
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for at least 30 minutes.

Prepare the Filling
In another bowl, combine diced apples, sugar, cinnamon, lemon juice, and cornstarch. Toss to coat and set aside.

Assemble and Bake
Preheat oven to 400°F (200°C). Roll out dough on a floured surface and cut into circles. Place a spoonful of apple filling on one half of each circle, and top with a few candied walnuts. Fold the other half over and crimp the edges to seal. Place on a baking sheet and bake for 20-25 minutes or until golden brown.

Allow hand pies to cool slightly before serving. Serve warm with scoops of vanilla ice cream on the side.
