Gnocchi Preparation

Cook the Potatoes
Boil the Russet potatoes in salted water until tender, about 20 minutes. Drain and let them cool slightly.

Prepare the Dough
Peel the potatoes and mash them in a bowl. Add ricotta cheese, flour, egg, and salt. Mix until a dough forms.

Shape the Gnocchi
Divide the dough into four pieces. Roll each piece into a long rope about ¾ inch thick. Cut into 1-inch pieces and shape with a fork.

Cook the Gnocchi
Bring a large pot of salted water to a boil. Add gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon.

Choose Your Sauce
Serve the gnocchi with your choice of red sauce, marinara, Alfredo, or vodka sauce.
