Cooking Instructions

  1. 1

    Prepare the Shrimp

In a bowl, toss the jumbo prawns with olive oil, minced garlic, lime juice, and a pinch of salt. Let marinate for 15 minutes.

  2. 2

    Make the Sauce

In a blender, combine smoked jalapeños and adobo sauce. Blend until smooth. Adjust seasoning as needed.

  3. 3

    Cook the Shrimp

Heat a skillet over medium-high heat. Add the marinated prawns and cook for about 2-3 minutes on each side until they are pink and cooked through.

  4. 4

    Combine and Serve

Pour the jalapeño adobo sauce over the cooked shrimp and toss to coat. Serve immediately with fresh guacamole and toasted crostini.

  5. 5

    Prepare the Crostini

Slice the French baguette into 1/2 inch thick pieces. Brush with olive oil and toast in the oven at 400°F (200°C) for about 5-7 minutes until golden.

  6. 6

    Make the Guacamole

In a bowl, mash ripe avocados with lime juice, chopped cilantro, and salt. Adjust seasoning to taste.
