    Prepare the Shrimp

    In a medium bowl, combine the coconut milk, salt, and black pepper. Add the shrimp and marinate for 30 minutes.

    Set Up Breading Stations

    In three separate shallow dishes, place the flour, beaten eggs, and shredded coconut. Take shrimp out of the marinade, letting excess liquid drip off.

    Bread the Shrimp

    Dredge each shrimp in flour, dip in the egg, then coat with shredded coconut. Set aside on a plate.

    Fry the Shrimp

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

    Make the Orange Chili Sauce

    In a saucepan, combine orange juice, honey, chili sauce, soy sauce, minced garlic, cornstarch, and water. Cook over medium heat until thickened, stirring constantly.

    Serve the coconut shrimp with the orange chili sauce on the side.
