    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the short ribs with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for 5-7 minutes until softened. Add minced garlic and cook for an additional minute.

    Deglaze the Pot

    Pour in the cabernet sauvignon wine, scraping the bottom of the pot to release any brown bits. Bring to a simmer.

    Braise the Ribs

    Return the short ribs to the pot, add beef broth and bay leaves. Bring to a boil, then cover and transfer to the preheated oven. Braise for 2.5 to 3 hours until the meat is tender.

    Prepare Mashed Potatoes and Vegetables

    While the ribs are braising, prepare mashed potatoes and your choice of chef's vegetables. Boil potatoes, mash with butter and cream, season with salt and pepper. Steam or sauté vegetables until tender.

    Serve

    Once the ribs are tender, remove them from the oven. Serve the short ribs with mashed potatoes and vegetables. Enjoy!
