1. Prepare the Potatoes
Preheat your oven to 400°F (200°C). Cut the potatoes into wedges, toss them with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for about 30-35 minutes until golden and crispy.
2. Cook the Steak
Season the New York steak generously with salt and crushed black peppercorns on both sides. Heat olive oil in a skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from skillet and let it rest.
3. Make the Peppercorn Sauce
In the same skillet, reduce the heat to medium and add butter. Once melted, add a tablespoon of crushed peppercorns and sauté for about 30 seconds. Pour in the beef broth and scrape the bottom of the skillet to deglaze. Let it simmer for about 5 minutes. Stir in the heavy cream and simmer until the sauce thickens, about 3-4 minutes.
4. Prepare the Chef's Vegetables
Steam or sauté the chef's vegetables of your choice until tender but still vibrant in color.
5. Serve
Slice the steak and plate it with roasted potatoes and chef's vegetables. Drizzle the peppercorn sauce over the steak and garnish with fresh parsley.
