    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly. Pat dry and poke several holes in each potato with a fork.

    Bake the Potatoes

    Rub the potatoes with olive oil and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until tender when pierced with a fork.

    Scoop out the Potatoes

    Once baked, let the potatoes cool slightly. Cut each potato in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato in the skin.

    Add Cheese and Bacon

    Sprinkle the cheddar cheese and crumbled bacon inside each potato skin.

    Bake Again

    Return the filled skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Prepare the Cilantro Cream

    In a small bowl, mix the sour cream with chopped cilantro and green onions. Season with salt and pepper to taste.

    Serve

    Remove the potato skins from the oven and serve hot with the cilantro cream on the side for dipping.
