Instructions for Tomato Bisque and Ciabatta Melt

    Prepare the Tomato Bisque

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.

    Add San Marzano tomatoes (crushed), vegetable broth, basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

    Use an immersion blender to puree the soup until smooth (or carefully transfer to a blender). Adjust seasoning if necessary.

    Make the Ciabatta Melt

    Butter one side of each slice of Ciabatta bread. On the unbuttered side, layer cheddar and Swiss cheese.

    Top with another slice of bread, buttered side up. Heat a skillet over medium heat and grill each sandwich for 3-4 minutes on each side until golden brown and the cheese is melted.

    Serve the grilled cheese sandwiches hot with a bowl of tomato bisque.
