Cook the Beef
In a skillet over medium-high heat, sear the beef tenderloin tips for about 3-4 minutes on each side, or until they reach your desired doneness. Remove from heat and let them rest.

Make the Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a gentle boil over medium heat, then reduce the heat to low and let it simmer until it thickens, about 15-20 minutes. Stir occasionally to prevent burning.

Prepare the Potatoes
Peel and slice the potatoes into flat fries (about 1/4 inch thick).

Cook the Fries
Toss the sliced potatoes with olive oil, salt, and paprika. Spread them in a single layer on a baking sheet and bake in a preheated oven at 425°F (220°C) for 25-30 minutes or until golden and crispy, flipping halfway through.

Plate the Dish
On a serving platter, lay down the flat fries, top with the seared steak bites, and drizzle with balsamic reduction. Finish by garnishing with fresh micro greens.
