Method
Prepare the Sausages

Cook Sausages
In a skillet over medium heat, cook the sausage links until browned and cooked through, about 8-10 minutes. Set aside to cool slightly.
Make Waffle Batter

Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Dry and Wet Ingredients
Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Prepare the Honey Balsamic Drizzle

Mix Drizzle
In a small bowl, whisk together the honey and balsamic vinegar until smooth. Set aside.
Fry the Pigs in a Blanket

Heat Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Dip and Fry
Take each cooked sausage link and dip it into the waffle batter, ensuring it is fully coated. Carefully lower it into the hot oil. Repeat with remaining sausages, frying in batches if necessary.

Cook Until Golden Brown
Fry each sausage link for about 3-4 minutes, or until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.
