Marinating Chicken

Prepare Marinade
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, and paprika.

Marinate Chicken
Add the chicken breasts to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.
Frying Chicken

Prepare Batter
In a separate bowl, whisk together the flour, cornstarch, salt, black pepper, paprika, and cayenne pepper.

Heat Oil
Heat oil in a deep fryer or a large pot to 350°F (175°C). Remove the chicken from the marinade, allowing excess to drip off.

Coat Chicken
Dredge each chicken breast in the flour mixture, making sure to coat them evenly.

Fry Chicken
Carefully place the coated chicken breasts in the hot oil. Fry for 6-8 minutes or until golden brown and cooked through. Use a meat thermometer to ensure they reach an internal temperature of 165°F (75°C).

Remove the chicken from the oil and place on a wire rack or paper towel to drain excess oil.
Making Honey Hot Sauce

Combine Ingredients
In a small saucepan over medium heat, combine the honey, hot sauce, and butter.

Stir until the butter is melted and the sauce is heated through. Remove from heat and set aside.
Assembling Sandwich

Toast Buns
Toast the burger buns until golden brown.

Add Chicken & Cheese
Place a fried chicken breast on each bun, add a slice of pepperjack cheese on top, and drizzle with the honey hot sauce.

Top with pickles and a generous serving of coleslaw.
