    Slow Roast the Pork

    Preheat your oven to 300°F (150°C). Rub the pork shoulder with garlic powder, onion powder, cumin, salt, and black pepper. Place the pork in a roasting pan and pour the green chile sauce over it. Cover the pan with foil and roast for about 4-5 hours, or until the pork is tender and easily shredded with a fork.

    Make the Cole Slaw

    In a large bowl, combine the shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage and carrots, and mix until well combined. Refrigerate for at least 30 minutes before serving.

Pickled Onions Preparation

    Pickle the Onions

    In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar and salt dissolve. Place the sliced red onions in a jar and pour the hot vinegar mixture over them. Let them cool to room temperature, then refrigerate for at least 1 hour.

    Assemble the Sliders

    Once the pork is done roasting, shred it with two forks and mix it with any remaining juices in the pan. To assemble, cut the Hawaiian buns in half and layer the shredded pork on the bottom half. Top with cole slaw, pickled onions, and a sprinkle of cojita cheese. Place the top half of the bun on each slider and serve immediately.
