Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat Calamari
Dredge the calamari rings in the flour mixture until evenly coated. Shake off excess flour.

Heat Oil
In a deep frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).

Fry Calamari
Fry the coated calamari rings in batches for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Sauté Garlic
Add minced garlic to the oil and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Tomatoes and Seasonings
Stir in crushed tomatoes, oregano, basil, salt, black pepper, sugar, and red pepper flakes. Mix well.

Simmer Sauce
Let the sauce simmer for 15-20 minutes, stirring occasionally, until thickened.
