    Caramelize the Onions

    In a large pot, melt the unsalted butter over medium heat. Add the sliced yellow onions and a pinch of salt. Cook, stirring frequently, until the onions are golden brown and caramelized, about 30-40 minutes.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to reduce by half, about 5 minutes.

    Add Broth and Herbs

    Add the beef broth, fresh thyme, bay leaf, salt, and black pepper to the pot. Bring to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare Toppings

    While the soup is simmering, preheat your oven to 350°F (175°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 10 minutes.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe crocks, leaving some space at the top.

    Add Toppings

    Top each bowl of soup with a slice of toasted baguette and sprinkle generously with Gruyère cheese. Add a sprinkle of grated Parmesan cheese on top.

    Broil

    Place the crocks under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch closely to prevent burning.
