Beef and Onions Preparation

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Season the beef roast with salt and black pepper. Sear the roast for about 4-5 minutes on each side until browned.

Slow Cook the Beef
Transfer the seared beef roast to a slow cooker. Add the caramelized onions, garlic, beef broth, and Worcestershire sauce. Cook on low for 8 hours or until the beef is tender and easily shredded.

Prepare the Baguette
Once the beef is cooked, slice the baguettes in half lengthwise. Toast them lightly if desired.

Assemble the Sandwich
Shred the beef and place a generous portion on the bottom half of each baguette. Top with slices of Swiss cheese.
Serve

Prepare Au Jus
Strain the reserved cooking liquid from the slow cooker into a pot to serve as au jus.

Close the sandwiches and serve them warm with the au jus on the side for dipping.
