Fish Sticks Preparation

    Prepare the Breading Stations

    Set up three shallow dishes: one with flour, one with beaten eggs, and one with bread crumbs mixed with salt, black pepper, garlic powder, and paprika.

    Cut the Cod

    Cut the Icelandic cod fillets into stick shapes, about 1 inch wide and 4 inches long.

    Bread the Cod

    Coat each cod stick first in flour, shaking off any excess, then dip into the beaten eggs, and finally coat with the seasoned bread crumbs.

    Heat the Oil

    In a large skillet or deep fryer, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish Sticks

    Fry the breaded cod sticks in the hot oil for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the potatoes and cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil for Frying

    In a large pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the soaked and drained potato strips to the hot oil in batches. Fry for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, sprinkling with salt to taste.
