Preparation of Chicken

Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, paprika, garlic powder, and onion powder. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

Prepare Breading Mixture
In another bowl, mix together all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. This will be your breading mixture.

Heat Oil
In a large, deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Chicken
Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the breading mixture, pressing lightly to ensure the breading adheres.

Fry the Chicken
Carefully place the breaded chicken pieces into the hot oil, frying in batches if necessary. Fry for about 6-8 minutes on each side, or until golden brown and the internal temperature reaches 165°F (74°C).

Drain Excess Oil
Once cooked, remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to make fries.

Fry the Fries
In a separate pot or fryer, heat the vegetable oil to 350°F (175°C). Fry the potato strips in batches for about 5-7 minutes until golden brown and crispy.

Season the Fries
Remove the fries from the oil, drain on paper towels, and season with salt to taste.

Serve the crispy fried chicken alongside a generous portion of fries. Optionally, garnish with fresh herbs or serve with dipping sauces.
