For the Chicken

Prepare the Chicken
Preheat your grill or grill pan over medium-high heat. Rub the chicken breasts with olive oil and evenly coat them with blackening seasoning.

Cook the Chicken
Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Slice the bell pepper and onion, then add them to the skillet. Sauté for about 5-7 minutes, until they are tender and slightly caramelized.

Assemble the Focaccia Sandwich
Slice the grilled chicken into strips. On one slice of focaccia, layer the mixed greens, followed by the blackened chicken, sautéed peppers and onions, and a slice of swiss cheese. Drizzle balsamic vinegar over the top and place the second slice of focaccia on top.

Grill the Sandwich
Place the assembled focaccia sandwich on the grill for 2-3 minutes on each side, or until the bread is crispy and the cheese is melted.
For Serving

Serve with Soup
Heat your choice of soup in a small pot over medium heat. Serve the chicken focaccia sandwich alongside the cup of soup.
