Braised Short Ribs

Sear the Ribs
Preheat oven to 325°F (160°C). Season short ribs with salt and pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove and set aside.

Sauté Vegetables
In the same pot, add chopped onion, diced carrots, and celery. Sauté until softened, about 5-7 minutes. Add minced garlic and cook for another 1-2 minutes.

Goat Cheese Mousse

Whip the Cream
In a mixing bowl, whip the heavy cream until soft peaks form.

Combine Ingredients
In another bowl, mix goat cheese with salt and pepper until smooth. Gently fold in the whipped cream until fully combined. Chill until ready to serve.
Creamy Risotto

Sauté Onions and Garlic
In a large saucepan, heat a tablespoon of olive oil over medium heat. Add finely chopped onion and minced garlic, sauté until translucent.

Toast the Rice
Add arborio rice to the pan and cook for 2-3 minutes until the rice is slightly translucent.

Add Wine and Broth
Pour in white wine, stirring until absorbed. Gradually add chicken broth, one ladle at a time, stirring constantly until absorbed before adding more. Continue until rice is creamy and al dente.

Finish the Risotto
Stir in parmesan cheese, butter, salt, and pepper. Remove from heat and keep warm.
