Method
Pork Chop

Season the Pork Chop
Rub the double-bone frenched pork chop with salt and black pepper on both sides.

Sear the Pork Chop
In a large skillet, heat olive oil over medium-high heat. Add the pork chop and sear for about 4-5 minutes on each side until golden brown.

Sweet Potato Puree

Prepare the Sweet Potatoes
Peel and cube the sweet potatoes. Place them in a pot of salted water and bring to a boil.

Cook the Sweet Potatoes
Simmer the sweet potatoes for about 15-20 minutes or until tender. Drain and return to the pot.

Make the Puree
Add butter, salt, and cinnamon to the cooked sweet potatoes. Mash until smooth and creamy.

Cook the Chutney
In a saucepan over medium heat, combine the diced apples, brown sugar, apple cider vinegar, bourbon, chopped onion, grated ginger, cinnamon, and nutmeg.

Simmer
Simmer the mixture for about 15-20 minutes, stirring occasionally, until the apples are soft and the chutney has thickened.
