Preparing the Chicken

1. Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.

2. Bread the Chicken

Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, and then coat with panko breadcrumbs, pressing gently to adhere.

3. Cook the Chicken

In a large skillet over medium-high heat, heat the olive oil. Add the breaded chicken breasts and fry until golden brown and cooked through, about 5-7 minutes per side. Transfer to a baking sheet and finish cooking in the oven for 10-15 minutes.

4. Assemble the Chicken Sandwich

Once the chicken is cooked, spread jalapeño cream cheese on each piece. Top with red onion jam, chipotle BBQ sauce, frizzled onions, tomato slices, and a handful of arugula. Serve immediately.
