Prepare the batter
Gradually pour in the beer while whisking until the batter is smooth and free of lumps. Set aside.

Heat the oil
In a large deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Prepare the catfish
Pat the catfish fillets dry with paper towels. This will help the batter stick better.

Batter the catfish
Dip each catfish fillet into the batter, ensuring it is fully coated. Allow excess batter to drip off.

Fry the catfish
Carefully place the battered catfish fillets into the hot oil, a few at a time, without overcrowding the pan. Fry for about 4-5 minutes or until golden brown and cooked through.

Drain and serve
Remove the catfish from the oil and place on a plate lined with paper towels to drain excess oil. Serve hot with french fries and coleslaw.

In a large bowl, combine the coleslaw mix with the coleslaw dressing. Toss until evenly coated.
