Prepare the Pork
Place the pork loin between two pieces of plastic wrap. Use a meat mallet or rolling pin to pound the pork to about 1/4 inch thickness. Season both sides with salt and pepper.

Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and bread crumbs. First, dredge each piece of pork in flour, shaking off the excess. Dip into the eggs, then coat with bread crumbs.

Fry the Schnitzel
In an iron skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded pork. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Serve
Serve the Wiener Schnitzel hot with lemon wedges on the side.
