Prepare the Ingredients

Chop the beef chuck into bite-sized pieces, dice the onion, mince the garlic, and chop the bell pepper and carrots. Peel and cube the potatoes.

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the onions and garlic, sauté until soft, about 3-4 minutes. Add the bell pepper and carrots, and cook for another 3 minutes.

Brown the Beef

Add the beef to the pot, browning it on all sides. This should take about 5-7 minutes.

Add Remaining Ingredients

Stir in the tomato paste, paprika, salt, black pepper, bay leaf, and beef broth. Bring to a boil.

Simmer

Reduce heat to low and let the stew simmer for about 1.5 to 2 hours, or until the beef is tender.

Add Potatoes

Add the cubed potatoes to the stew during the last 30 minutes of cooking.

Serve

Remove the bay leaf and serve hot, preferably with egg dumplings.
