For the Jäger Schnitzel

Prepare the Pork

Pound the pork loin pieces to about 1/4 inch thickness. Season with salt and pepper.

Breading Process

Set up a breading station with flour, beaten eggs, and breadcrumbs. Dredge each piece of pork in flour, dip in egg, and coat with breadcrumbs.

Fry the Schnitzel

Heat vegetable oil in a large pan over medium-high heat. Fry the breaded pork schnitzels until golden brown, about 3-4 minutes per side. Transfer to paper towels to drain.

For the Mushroom Sauce

Sauté Vegetables

In a saucepan, melt butter over medium heat. Add the chopped onion and garlic, and sauté until onion is translucent.

Cook Mushrooms

Add sliced mushrooms to the pan and cook until they are softened and browned.

Make the Sauce

Pour in the beef broth and let it simmer for a few minutes. Stir in the heavy cream, and season with salt and pepper to taste. Cook until the sauce thickens slightly.

Finish with Parsley

Stir in the chopped parsley before serving.

Make the Batter

In a bowl, whisk together the flour, eggs, milk, and salt until smooth.

Cook the Spaetzle

Bring a large pot of salted water to a boil. Use a spaetzle maker or a colander to drop the batter into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove and set aside.
