Prepare the Potatoes
Peel the Russet potatoes, then cut them into long thin strips to form fries. Soak them in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove moisture.

Carefully add a batch of the dried potato strips to the hot oil. Fry them for about 5-7 minutes or until golden brown and crispy. Do not overcrowd the pot.

Once fried, remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, season with salt and black pepper to taste.
