Method

Preparation Steps

  1. 1

    Prepare the Mushrooms

Clean and slice the shiitake and portabella mushrooms. Finely chop the shallots.

  2. 2

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add the shallots and sauté until translucent. Then add the shiitake and portabella mushrooms, seasoning with salt and pepper. Cook until the mushrooms are tender, about 5-7 minutes.

  3. 3

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  4. 4

    Assemble the Flatbreads

Place the flatbreads on a baking sheet. Spread the goat cheese evenly over each flatbread. Top with the sautéed mushroom and shallot mixture.

  5. 5

    Bake the Flatbreads

Bake in the preheated oven for 10-12 minutes or until the flatbreads are crispy and the goat cheese is slightly golden.

  6. 6

    Finish with Chive Oil

Remove from the oven and drizzle with chive oil. Garnish with fresh chives before serving.
