    Start by marinating the chicken pieces in red wine for at least 2 hours, or overnight for best results.

    In a large Dutch oven, heat olive oil over medium heat. Add diced bacon and cook until crispy. Remove bacon and set aside, leaving the fat in the pot.

    In the same pot, add the marinated chicken pieces (reserve the wine) and brown them on all sides. Remove the chicken and set aside.
