    Prepare the Chicken Livers

    Clean the chicken livers by removing any connective tissue and fat. Rinse them under cold water and pat dry with paper towels.

    Cook the Aromatics

    In a skillet, melt 50g of butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.

    Sauté the Livers

    Increase the heat to medium-high, add the chicken livers to the skillet, and season with salt and pepper. Cook for about 3-4 minutes on each side until browned but still slightly pink in the center.

    Deglaze the Pan

    Remove the skillet from heat and carefully add the brandy or cognac. Return to heat and let it simmer for a minute to cook off the alcohol.

    Transfer the liver mixture to a food processor. Add the remaining butter and heavy cream. Blend until smooth and creamy. Taste and adjust seasoning if necessary.
