Cheesecake Preparation

    Prepare the Crust

    Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and brown sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until well blended. Add the sour cream, vanilla extract, and heavy cream, mixing until smooth. Finally, add the eggs one at a time, mixing just until combined after each addition. Do not overmix.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.

    Chill the Cheesecake

    After it has cooled, cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Brûlée the Top

    Before serving, sprinkle the top of the cheesecake evenly with granulated sugar. Using a kitchen torch, carefully brûlée the sugar until it melts and caramelizes to a golden brown. Let it sit for a few minutes to harden before serving.
